- 1 lb. Shrimp, peeled and deveined
- 2 diced chicken breasts (optional)
- 1 onion, diced
- 1 green bell pepper, diced

- 1 yellow bell pepper, diced
- 4 cloves of garlic, minced
- 1 can of diced tomatoes
- 1/2 cup of chicken broth
- 2 tbsp avocado oil
- 2 tbsp Cajun seasoning
- 1 tbsp Smoked Paprika
- 1 tbsp Dried Thyme
- Salt and pepper, to taste
Directions: Heat the canola oil in a large saucepan over medium-high heat.
Add the sliced Andouille sausage to the pan, and cook until browned and crispy on both sides.
Remove the sausage from the pan and set aside.
Add the diced chicken breasts to the same pan, and cook until browned and cooked through.
Remove the chicken from the pan and set aside.
Add the diced onion, green bell pepper, and red bell pepper to the pan, and cook until softened and fragrant.
Add the minced garlic and cook for an additional 30 seconds.
Add the can of diced tomatoes, chicken broth, and all of the seasonings to the pan, and stir well.
Add the cooked sausage, chicken, and peeled, deveined shrimp to the pan, and stir well.
Cover the pan and simmer for 15-20 minutes, or until the shrimp are pink and cooked through.
Serve hot, garnished with fresh parsley or green onions, if desired.
